Certified Organic Rutabaga is a hearty, cold-weather root vegetable — a natural cross between a turnip and a wild cabbage — with golden-yellow flesh, purple-tinged skin, and a mildly sweet, earthy flavour that deepens and mellows beautifully when cooked. Rutabaga is a classic cold-season staple, particularly popular in Scandinavian, British, and Canadian cooking. Its dense, starchy flesh makes it ideal for roasting — it caramelizes beautifully and develops a sweet, nutty flavour. Mash alone or combine with potato for a lighter, more flavourful mash; add to soups, stews, and braises where it holds its shape well; or cut into wedges and roast with olive oil and herbs. Raw rutabaga can also be grated into slaws. A natural source of Vitamin C, potassium, and dietary fibre, and lower in starch than potato.
