Red beets are one of the most versatile root vegetables in the kitchen. Roast whole in foil until tender and caramelized; slice thinly and eat raw in salads; steam or boil and dress with vinegar and olive oil; juice for a vibrant, earthy drink; or pickle for a tangy condiment. Their deep crimson colour will stain hands and cutting boards, so handle accordingly. Beet greens are also edible and can be sautéed like chard.
