Certified Organic Delicata Squash is a small, oblong winter squash with cream-coloured skin striped with green, and sweet, golden-yellow flesh with a flavour reminiscent of sweet potato — rich, honeyed, and mildly nutty. Delicata is widely considered one of the most flavourful and convenient squash varieties: its thin, tender skin is fully edible when roasted, making it the only winter squash that requires no peeling. The easiest preparation is to halve lengthwise, scoop out the seeds, slice into half-moons, toss with olive oil and seasoning, and roast at high heat until caramelized and tender — the edges crisp up beautifully. The seeds can be rinsed, seasoned, and roasted as a snack. Delicata also works well stuffed and baked whole, added to grain bowls and salads, or puréed into soups.
