White mulberry extract, from the leaves of the Morus alba tree, contains several compounds that act as alpha-glucosidase enzyme inhibitors. Alpha-glucosidase enzymes break down carbohydrates into highly absorbable glucose molecules in the intestines. When these enzymes are inhibited, glucose is released more slowly from food, preventing the initial spike in blood sugar levels after eating, and the resulting spike in insulin secretion. It prolongs glucose absorption so that glucose levels remain more stable between meals.
